桑葚花青素的提取与纯化研究进展

摘要(Abstract):
药食两用资源的桑葚,富含花青素,具有抗氧化、免疫调节、抗肿瘤、保肝、抗衰老和抗炎等多种生物活性,被广泛应用于食品、药品和保健品行业。本文梳理了花青素提取、纯化工艺最新研究进展,为桑葚花青素的研究和工业利用提供借鉴。
